Raw Vegan Tomato Soup
Do you know what my favorite thing is on a rainy day?
Soup. I love soups in the fall it feels just right. Have you ever tried soup raw? I love them! Not only are they warm and satiating just like cooked soups but they are full of enzymes! I love getting in all of my nutrients in one tasty dish at a time.
For this recipe you will need:
1/4 Onion or 1 clove garlic
As many local tomatoes as you desire! The more you add the larger the soup. The key to a perfect soup is local produce, I have tried with organic tomatoes and it isn’t as delicious.
8-12 leaves of basil
1 tsp cashew cream (the more the creamier) I like my fat low so I kept it low
1/4 of a lime
I’m am completely blown away with the tomatoes I got from the Famers Market on Saturday. The green ones are SO beautiful and so sweet. I purchased so many tomatoes on Saturday I could have them for every meal! I am also very pleased about my home grown basil my plant has been blooming with joy, so happy with many leaves!
The recipe is very simple. Put everything into a high speed blender and blend. Any blender will work, but it is always nice to have a blender warm the soup up just a bit! How cool is having a soup with all its nutrients in a raw form but still have some heat? It’s perfect. Adding a few spices to the soup never hurts. Play around and let me know what you guys think. :)
